Ingredients
2 ripe avocados, diced
2 cups cherry tomatoes, halved
¼ red onion, thinly sliced
2 tablespoons chopped fresh parsley or cilantro
1 tablespoon lemon juice (fresh)
2 tablespoons extra virgin olive oil
Salt and pepper to taste
Optional: crumbled feta or mozzarella balls for extra creaminess
Instructions
In a large bowl, combine diced avocado, halved tomatoes, and sliced red onion.
Add chopped herbs and gently toss.
In a small bowl, whisk together lemon juice, olive oil, salt, and pepper.
Pour dressing over the salad and gently toss to coat.
Serve immediately or chill for 10–15 minutes before serving.

Best served fresh—avocado may brown if stored too long.
