Ingredients
- 1 lb ground beef
- 2 cups cooked rice
- 1 cup red enchilada sauce
- 12 small corn tortillas, cut into halves
- 2 cups shredded cheddar cheese
- 1 cup shredded Monterey Jack cheese
- 1 can black beans, drained
- 1 can diced tomatoes with green chilies, drained
- 1 small onion, diced
- 1 tsp cumin
- 1 tsp chili powder
- 1 tsp garlic powder
- Salt and pepper to taste
Instructions
- Preheat oven to 375°F (190°C).
- In a skillet, cook ground beef with diced onions over medium heat until browned; drain excess fat.
- Stir in cumin, chili powder, garlic powder, salt, and pepper. Add black beans and diced tomatoes to the beef mixture.
- Spread a thin layer of enchilada sauce on the bottom of a greased 9x13 inch casserole dish.
- Layer half the tortillas, followed by half the beef mixture, half the cooked rice, and half the cheese.
- Pour half the enchilada sauce over the top.
- Repeat with another layer of tortillas, beef mixture, rice, sauce, and cheese.
- Cover with foil and bake for 25 minutes.
- Remove foil and bake an additional 10 minutes until cheese is melted and bubbly.
- Let cool for 5 minutes before serving.
Notes
- You can add sliced jalapeños for extra heat.
- Serve with sour cream, salsa, or guacamole for added flavor.
