Ingredients

  • 1 lb ground beef
  • 2 cups cooked rice
  • 1 cup red enchilada sauce
  • 12 small corn tortillas, cut into halves
  • 2 cups shredded cheddar cheese
  • 1 cup shredded Monterey Jack cheese
  • 1 can black beans, drained
  • 1 can diced tomatoes with green chilies, drained
  • 1 small onion, diced
  • 1 tsp cumin
  • 1 tsp chili powder
  • 1 tsp garlic powder
  • Salt and pepper to taste


Instructions

  • Preheat oven to 375°F (190°C).
  • In a skillet, cook ground beef with diced onions over medium heat until browned; drain excess fat.
  • Stir in cumin, chili powder, garlic powder, salt, and pepper. Add black beans and diced tomatoes to the beef mixture.
  • Spread a thin layer of enchilada sauce on the bottom of a greased 9x13 inch casserole dish.
  • Layer half the tortillas, followed by half the beef mixture, half the cooked rice, and half the cheese.
  • Pour half the enchilada sauce over the top.
  • Repeat with another layer of tortillas, beef mixture, rice, sauce, and cheese.
  • Cover with foil and bake for 25 minutes.
  • Remove foil and bake an additional 10 minutes until cheese is melted and bubbly.
  • Let cool for 5 minutes before serving.

Notes

  • You can add sliced jalapeños for extra heat.
  • Serve with sour cream, salsa, or guacamole for added flavor.
