Make delicious beef enchiladas with this easy recipe featuring ground beef, a homemade enchilada sauce, melty cheese, and soft tortillas. Perfect for Mexican cuisine lovers, this dish is hearty, flavorful, and great for weeknight meals.


Ingredients

  • 1 lb ground beef
  • 1 small onion, diced
  • 2 garlic cloves, minced
  • 1 tsp chili powder
  • 1 tsp cumin
  • 1/2 tsp paprika
  • Salt and pepper, to taste
  • 1 (10 oz) can red enchilada sauce
  • 8 flour tortillas
  • 2 cups shredded cheddar or Mexican blend cheese
  • Optional toppings: sour cream, chopped cilantro, diced tomatoes


Instructions

  • Preheat oven to 375°F (190°C).
  • In a skillet over medium heat, cook ground beef with onion and garlic until browned. Drain excess grease.
  • Add chili powder, cumin, paprika, salt, and pepper to the beef mixture. Stir well to combine.
  • Spread a thin layer of enchilada sauce at the bottom of a 9x13-inch baking dish.
  • Divide the beef mixture among tortillas, sprinkle with some cheese, roll tightly, and place seam-side down in the baking dish.
  • Pour remaining enchilada sauce over the rolled tortillas and top with the rest of the cheese.
  • Bake uncovered for 20-25 minutes or until the cheese is bubbly and golden.
  • Remove from oven and let cool for a few minutes. Garnish with optional toppings before serving.

Notes

  • Use corn tortillas instead of flour if preferred.
  • Adjust seasoning and spice level to taste.
  • Leftovers can be stored in the refrigerator for up to 3 days.
