Ingredients
- 1 lb ground beef
- 1 small onion, diced
- 2 garlic cloves, minced
- 1 tsp chili powder
- 1 tsp cumin
- 1/2 tsp paprika
- Salt and pepper, to taste
- 1 (10 oz) can red enchilada sauce
- 8 flour tortillas
- 2 cups shredded cheddar or Mexican blend cheese
- Optional toppings: sour cream, chopped cilantro, diced tomatoes
Instructions
- Preheat oven to 375°F (190°C).
- In a skillet over medium heat, cook ground beef with onion and garlic until browned. Drain excess grease.
- Add chili powder, cumin, paprika, salt, and pepper to the beef mixture. Stir well to combine.
- Spread a thin layer of enchilada sauce at the bottom of a 9x13-inch baking dish.
- Divide the beef mixture among tortillas, sprinkle with some cheese, roll tightly, and place seam-side down in the baking dish.
- Pour remaining enchilada sauce over the rolled tortillas and top with the rest of the cheese.
- Bake uncovered for 20-25 minutes or until the cheese is bubbly and golden.
- Remove from oven and let cool for a few minutes. Garnish with optional toppings before serving.
Notes
- Use corn tortillas instead of flour if preferred.
- Adjust seasoning and spice level to taste.
