  • 1 (15 oz) can black beans, drained and rinsed
  • 1 (28 oz) can crushed tomatoes
  • 1 (15 oz) can tomato sauce
  • 2-3 tablespoons chili powder (adjust to taste)
  • 1 tablespoon ground cumin
  • 1 teaspoon paprika (smoked paprika adds a nice touch)
  • 1 teaspoon dried oregano
  • 1/2 teaspoon cayenne pepper (adjust to taste)
  • Salt and black pepper, to taste
  • 1 cup beef broth or water
  • Optional toppings: shredded cheese, sour cream, chopped green onions, cilantro


Instructions

  1. In a large pot or Dutch oven, cook the ground beef over medium heat until browned. Drain excess fat.
  2. Add the chopped onion and minced garlic to the beef. Cook until the onion is translucent, about 5 minutes.
  3. Stir in chili powder, cumin, paprika, oregano, cayenne pepper, salt, and black pepper. Cook for another 2 minutes to allow the spices to bloom.
  4. Add the kidney beans, black beans, crushed tomatoes, tomato sauce, and beef broth or water. Stir well to combine.
  5. Bring the mixture to a boil, then reduce heat to low and simmer, covered, for at least 1 hour, stirring occasionally. For deeper flavor, simmer for 2-3 hours.
  6. Taste and adjust seasonings as needed. If the chili is too thick, add more beef broth or water to reach your desired consistency.
