Ingredients

  • 2 lbs ground bison
  • 1 cup breadcrumbs
  • 1 medium onion, finely chopped
  • 2 garlic cloves, minced
  • 2 large eggs, beaten
  • 1/2 cup ketchup, divided
  • 1/4 cup milk
  • 2 tablespoons Worcestershire sauce
  • 1 tablespoon fresh thyme, chopped
  • 1 tablespoon fresh parsley, chopped
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 cup brown sugar
  • 2 tablespoons apple cider vinegar
  • 1 tablespoon Dijon mustard


Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a large bowl, mix together the ground bison, breadcrumbs, onion, garlic, eggs, 1/4 cup ketchup, milk, Worcestershire sauce, thyme, parsley, salt, and pepper until well combined.
  3. Transfer the mixture to a loaf pan or shape into a loaf on a lined baking tray.
  4. In a separate bowl, whisk together the remaining 1/4 cup ketchup, brown sugar, apple cider vinegar, and Dijon mustard to create the glaze.
  5. Brush the glaze generously over the meatloaf.
  6. Bake in the preheated oven for 50-60 minutes, or until the meatloaf is cooked through and the internal temperature reaches 160°F (70°C).
  7. Allow the meatloaf to rest for 10 minutes before slicing.

Notes

Bison is leaner than beef, so be careful not to overcook it, which can result in a drier meatloaf. For added moisture, consider mixing in a shredded zucchini or a bit of grated cheese.
