For the Top Layer:

  • 2 cups whipped cream or whipped topping
  • Lemon zest and additional blueberries for garnish


Instructions

  1. Prepare the Crust: In a mixing bowl, combine the flour, melted butter, and chopped pecans. Press the mixture into the bottom of a 9x13-inch baking dish. Bake at 350°F (175°C) for 15 minutes or until lightly golden. Allow to cool completely.
  2. Cream Cheese Layer: In a separate mixing bowl, beat the cream cheese and powdered sugar together until smooth and creamy. Fold in the whipped cream. Spread this mixture over the cooled crust.
  3. Lemon Layer: In another bowl, whisk together the lemon pudding mix and cold milk for about 5 minutes or until the pudding starts to thicken. Spread the lemon pudding over the cream cheese layer.
  4. Blueberry Layer: Evenly distribute the fresh blueberries (or blueberry pie filling) over the lemon pudding layer.
  5. Top Layer: Spread the whipped cream over the blueberry layer. Garnish with lemon zest and additional blueberries.
  6. Refrigerate for at least 4 hours, preferably overnight, before serving.

Notes

You can make a homemade blueberry sauce by simmering blueberries, sugar, and a bit of lemon juice, then letting it cool before adding it as a layer.
