Ingredients

1/2 head green cabbage, chopped

1 large onion, diced

2 carrots, sliced

2 celery stalks, sliced

1 bell pepper, chopped

2 cloves garlic, minced

1 can (14.5 oz) diced tomatoes

6 cups vegetable broth

1 tsp dried basil

1/2 tsp dried oregano

Salt and pepper to taste

Optional: a pinch of red pepper flakes for heat


Instructions

  1. In a large pot, sauté onion, garlic, carrots, and celery until softened.
  2. Add bell pepper and cabbage. Stir and cook for 5 minutes.
  3. Pour in diced tomatoes and vegetable broth.
  4. Add basil, oregano, salt, pepper, and red pepper flakes if using.
  5. Bring to a boil, then reduce heat and simmer for 30 minutes.
  6. Serve hot and enjoy!

Notes
