Ingredients
2 boneless, skinless chicken breasts, sliced
1 tbsp Cajun seasoning
1 tbsp olive oil
1 red bell pepper, sliced
1 yellow bell pepper, sliced
1 green bell pepper, sliced
1 small red onion, sliced
2 cloves garlic, minced
Salt and pepper to taste
Fresh parsley, chopped (for garnish)
Instructions
Season chicken with Cajun seasoning, salt, and pepper.
In a large skillet, heat olive oil over medium-high heat.
Add chicken and cook until browned and cooked through, about 5-6 minutes. Remove from skillet.
In the same skillet, add garlic, onions, and bell peppers. Sauté until slightly tender, about 4-5 minutes.
Return chicken to the skillet and stir to combine. Cook for another 2-3 minutes.
Garnish with chopped parsley and serve hot.
Notes
Adjust Cajun seasoning based on your spice preference.
Great served over rice, quinoa, or cauliflower rice.
