Instructions
- In a large skillet, cook the chopped bacon over medium heat until crispy. Remove and set aside, leaving the drippings in the skillet.
- Add the diced onion and cook until softened, about 3-4 minutes. Add the garlic and cook for another minute.
- Stir in the green beans, potatoes, Cajun seasoning, smoked paprika, and black pepper. Toss to coat the vegetables in the seasonings.
- Pour in the chicken broth and bring to a simmer. Cover and cook for 20-25 minutes, stirring occasionally, until the potatoes are tender and the beans are cooked through.
- Stir in the butter and crispy bacon, cooking for another 2-3 minutes until the butter melts.
