Ingredients

  • 1 lb fresh green beans, trimmed
  • 1 lb baby potatoes, halved
  • 4 slices bacon, chopped
  • 1 small onion, diced
  • 3 cloves garlic, minced
  • 1 tsp Cajun seasoning
  • ½ tsp smoked paprika
  • ½ tsp black pepper
  • 1 cup chicken broth (or vegetable broth)
  • 2 tbsp butter
  • Salt to taste
  • Optional: hot sauce for serving


Instructions

  • In a large skillet, cook the chopped bacon over medium heat until crispy. Remove and set aside, leaving the drippings in the skillet.
  • Add the diced onion and cook until softened, about 3-4 minutes. Add the garlic and cook for another minute.
  • Stir in the green beans, potatoes, Cajun seasoning, smoked paprika, and black pepper. Toss to coat the vegetables in the seasonings.
  • Pour in the chicken broth and bring to a simmer. Cover and cook for 20-25 minutes, stirring occasionally, until the potatoes are tender and the beans are cooked through.
  • Stir in the butter and crispy bacon, cooking for another 2-3 minutes until the butter melts.
  • Serve hot, optionally with a drizzle of hot sauce for extra heat.
