Description

Ingredients

  • 1 lb ground beef
  • 1 small onion, chopped
  • 1 can (10 oz) diced tomatoes with green chilies
  • 1 can (10 oz) cream of mushroom soup
  • 4 medium potatoes, thinly sliced
  • 2 cups shredded cheddar cheese
  • 1 cup frozen corn
  • 1 tsp garlic powder
  • 1 tsp chili powder
  • Salt and pepper, to taste
  • ½ cup sour cream
  • ½ cup crushed tortilla chips (optional, for topping)


Instructions

  • Preheat oven to 350°F (175°C).
  • In a large skillet, brown ground beef with chopped onion over medium heat. Drain any excess fat.
  • Stir in diced tomatoes with green chilies, cream of mushroom soup, garlic powder, chili powder, salt, and pepper. Simmer for 5 minutes.
  • Layer half of the thinly sliced potatoes in a greased 9x13-inch baking dish. Spread half of the beef mixture over the potatoes.
  • Add a layer of frozen corn, then sprinkle with 1 cup of shredded cheddar cheese.
  • Repeat the layers, finishing with the remaining cheese on top. Optionally, add crushed tortilla chips for extra crunch.
  • Cover with foil and bake for 40 minutes. Remove foil and bake for an additional 10-15 minutes until cheese is bubbly and golden.
  • Let the casserole cool for a few minutes before serving.
