Ingredients
- 1 lb ground beef
- 1 small onion, chopped
- 1 can (10 oz) diced tomatoes with green chilies

- 4 medium potatoes, thinly sliced
- 2 cups shredded cheddar cheese
- 1 cup frozen corn
- 1 tsp garlic powder
- 1 tsp chili powder
- Salt and pepper, to taste
- ½ cup sour cream
- ½ cup crushed tortilla chips (optional, for topping)
Instructions
- Preheat oven to 350°F (175°C).
- In a large skillet, brown ground beef with chopped onion over medium heat. Drain any excess fat.
- Stir in diced tomatoes with green chilies, cream of mushroom soup, garlic powder, chili powder, salt, and pepper. Simmer for 5 minutes.
- Layer half of the thinly sliced potatoes in a greased 9x13-inch baking dish. Spread half of the beef mixture over the potatoes.
- Add a layer of frozen corn, then sprinkle with 1 cup of shredded cheddar cheese.
- Repeat the layers, finishing with the remaining cheese on top. Optionally, add crushed tortilla chips for extra crunch.
- Cover with foil and bake for 40 minutes. Remove foil and bake for an additional 10-15 minutes until cheese is bubbly and golden.
- Let the casserole cool for a few minutes before serving.
