Description

This cheesy baked asparagus recipe is the perfect side dish for any meal. Made with fresh asparagus spears, a blend of melted cheeses, garlic, and seasonings, it’s a quick and healthy option that doesn't skimp on flavor. Baked until bubbly and golden, it’s a low-carb, keto-friendly vegetable dish your whole family will love.

Ingredients

1 lb fresh asparagus, trimmed

1 tbsp olive oil

Salt and pepper, to taste

2 cloves garlic, minced

½ cup shredded mozzarella cheese

¼ cup grated Parmesan cheese

Optional: red pepper flakes or Italian seasoning

Instructions

Preheat the oven to 400°F (200°C).

Prepare the asparagus by washing and trimming the woody ends.

Toss asparagus in olive oil, salt, pepper, and garlic. Spread evenly on a baking sheet.

Sprinkle mozzarella and Parmesan evenly over the asparagus.

Bake for 12-15 minutes or until cheese is melted and slightly golden.

Serve warm. Optionally, garnish with extra cheese or herbs.

Notes

Use fresh asparagus for best texture.

For a crispier finish, broil for 1–2 minutes at the end.

You can swap mozzarella for cheddar or Gruyère for different flavor profiles.
