Description

Chef John's Fresh Salmon Cakes are tender, flaky, and bursting with fresh salmon flavor. Easy to make with simple ingredients, these golden-brown patties are perfect for weeknight dinners or elegant appetizers.


Ingredients

1 lb fresh salmon, cooked and flaked

1/2 cup panko breadcrumbs

1/4 cup mayonnaise

1 large egg

2 tablespoons minced red bell pepper

2 tablespoons chopped fresh parsley

1 tablespoon Dijon mustard

1 tablespoon lemon juice

1 teaspoon Worcestershire sauce

Salt and pepper to taste

Olive oil for frying


Instructions

  1. In a large bowl, combine flaked salmon, breadcrumbs, mayonnaise, egg, bell pepper, parsley, mustard, lemon juice, and Worcestershire sauce.
  2. Season with salt and pepper. Mix until just combined.
  3. Form into patties and chill for 15-20 minutes.
  4. Heat olive oil in a skillet over medium heat.
  5. Fry salmon cakes until golden brown on both sides, about 3–4 minutes per side.
  6. Drain on paper towels and serve warm.

Notes

Chilling helps the cakes hold their shape during frying.

Serve with tartar sauce, aioli, or a squeeze of lemon.

You can substitute cooked canned salmon in a pinch.
