Description

Ingredients

  • 1 lb chicken breasts, cut into bite-sized pieces
  • 2 tbsp olive oil
  • 1 bunch asparagus, trimmed and cut into 2-inch pieces
  • 8 oz mushrooms, sliced
  • 1 small onion, chopped
  • 3 cloves garlic, minced
  • 1 tsp dried thyme
  • 1 tsp dried rosemary
  • Salt and pepper, to taste
  • 1/4 cup chicken broth
  • Juice of 1 lemon
  • Fresh parsley, chopped (for garnish)


Instructions

  • Heat 1 tbsp olive oil in a large skillet over medium-high heat.
  • Season chicken with salt and pepper. Add to the skillet and cook until browned and cooked through, about 5-7 minutes. Remove and set aside.
  • In the same skillet, add remaining olive oil, onion, and garlic. Sauté until onion is translucent, about 3 minutes.
  • Add mushrooms and cook until they start to soften, about 4 minutes.
  • Stir in asparagus, thyme, and rosemary. Cook for another 3-4 minutes, until asparagus is tender-crisp.
  • Return chicken to the skillet. Add chicken broth and lemon juice, stirring to combine.
  • Simmer for 2-3 minutes until the sauce reduces slightly.
  • Garnish with fresh parsley and serve.

Notes

  • You can substitute chicken with shrimp or tofu for a different protein.
  • For extra flavor, add a splash of white wine when adding the chicken broth.
  • Store leftovers in an airtight container in the refrigerator for up to 3 days.
