Ingredients
- 1 lb chicken breasts, cut into bite-sized pieces
- 2 tbsp olive oil
- 1 bunch asparagus, trimmed and cut into 2-inch pieces
- 8 oz mushrooms, sliced
- 1 small onion, chopped
- 3 cloves garlic, minced
- 1 tsp dried thyme
- 1 tsp dried rosemary
- Salt and pepper, to taste
- 1/4 cup chicken broth
- Juice of 1 lemon
- Fresh parsley, chopped (for garnish)
Instructions
- Heat 1 tbsp olive oil in a large skillet over medium-high heat.
- Season chicken with salt and pepper. Add to the skillet and cook until browned and cooked through, about 5-7 minutes. Remove and set aside.
- In the same skillet, add remaining olive oil, onion, and garlic. Sauté until onion is translucent, about 3 minutes.
- Add mushrooms and cook until they start to soften, about 4 minutes.
- Stir in asparagus, thyme, and rosemary. Cook for another 3-4 minutes, until asparagus is tender-crisp.
- Return chicken to the skillet. Add chicken broth and lemon juice, stirring to combine.
- Simmer for 2-3 minutes until the sauce reduces slightly.
- Garnish with fresh parsley and serve.
Notes
- You can substitute chicken with shrimp or tofu for a different protein.
- For extra flavor, add a splash of white wine when adding the chicken broth.
