Ingredients

  • 1 lb chicken breasts, cubed
  • 4 large potatoes, diced
  • 6 slices bacon, cooked and crumbled
  • 1 cup ranch dressing
  • 1 packet ranch seasoning mix
  • 2 cups shredded cheddar cheese
  • 1/2 cup sour cream
  • 2 tablespoons olive oil
  • Salt and pepper, to taste
  • Optional: green onions, for garnish


Instructions

  • Preheat oven to 375°F (190°C).
  • In a large bowl, toss the diced potatoes with olive oil, ranch seasoning, salt, and pepper. Spread evenly in a greased casserole dish.
  • Bake the potatoes for 25-30 minutes until they start to soften.
  • While the potatoes are baking, cook and crumble the bacon. Sauté the cubed chicken in the same pan until browned.
  • In a bowl, mix the ranch dressing and sour cream together.
  • Remove the casserole dish from the oven and layer the cooked chicken and crumbled bacon on top of the potatoes.
  • Pour the ranch mixture evenly over the chicken and bacon.
  • Sprinkle the shredded cheddar cheese on top.
  • Return the casserole to the oven and bake for an additional 15-20 minutes, until the cheese is melted and bubbly.
  • Garnish with green onions if desired, and serve.
