Description

This Chicken Fajita Rice Casserole combines all the flavors of classic fajitas in one easy casserole. Featuring seasoned chicken, colorful bell peppers, onions, and cheesy rice, it's a complete meal that's perfect for any night of the week.


Ingredients

  • 1 lb chicken breast, thinly sliced
  • 1 cup rice, uncooked
  • 1 red bell pepper, sliced
  • 1 green bell pepper, sliced
  • 1 onion, sliced
  • 2 cups chicken broth
  • 1 cup shredded cheddar cheese
  • 1 tbsp olive oil
  • 2 tsp chili powder
  • 1 tsp cumin
  • 1 tsp garlic powder
  • 1/2 tsp paprika
  • Salt and pepper to taste


Instructions

  1. Preheat oven to 375°F (190°C).
  2. In a large skillet, heat olive oil and add chicken. Season with chili powder, cumin, garlic powder, paprika, salt, and pepper. Cook until chicken is browned.
  3. Add bell peppers and onion to the skillet. Sauté until vegetables are tender.
  4. In a baking dish, combine uncooked rice and chicken broth. Add the cooked chicken and vegetables. Stir well.
  5. Cover with foil and bake for 25 minutes. Remove foil, sprinkle with cheese, and bake for an additional 10 minutes or until cheese is melted and bubbly.
  6. Serve hot.

Notes

  • You can substitute any type of bell pepper for color variation.
  • For a spicier casserole, add diced jalapeños or increase the chili powder.
