Ingredients
1 lb boneless skinless chicken thighs or breasts
3 tbsp olive oil
3 tbsp lemon juice
3 cloves garlic, minced
1 tsp dried oregano
1 tsp ground cumin
Salt and pepper, to taste
1 cup cooked basmati or jasmine rice
1 cup chopped cucumber
1 cup halved cherry tomatoes
½ cup red onion, thinly sliced
½ cup crumbled feta cheese
1 cup tzatziki sauce
Fresh parsley, for garnish
Optional: kalamata olives, pita bread
Instructions
Marinate the Chicken: In a bowl, mix olive oil, lemon juice, garlic, oregano, cumin, salt, and pepper. Add chicken and marinate for 30 minutes to 2 hours.
Cook the Chicken: Grill or pan-sear the marinated chicken over medium heat for 5–7 minutes per side until fully cooked. Let rest and slice.
