Ingredients
- Cooked chicken, shredded
- Corn tortillas, cut into strips
- Black beans, drained and rinsed
- Corn kernels, drained
- Salsa
- Enchilada sauce
- Cheddar cheese, shredded
- Cream cheese
- Cilantro, chopped
- Cumin, garlic powder, salt, and pepper
Instructions
- Preheat your oven to 375°F (190°C).
- In a large bowl, mix the shredded chicken, black beans, corn, salsa, enchilada sauce, cream cheese, and spices until well combined.
- In a greased baking dish, layer half of the tortilla strips. Top with the chicken mixture and half of the shredded cheddar.
