Ingredients

  • Cooked chicken, shredded
  • Corn tortillas, cut into strips
  • Black beans, drained and rinsed
  • Corn kernels, drained
  • Salsa
  • Enchilada sauce
  • Cheddar cheese, shredded
  • Cream cheese
  • Cilantro, chopped
  • Cumin, garlic powder, salt, and pepper


Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a large bowl, mix the shredded chicken, black beans, corn, salsa, enchilada sauce, cream cheese, and spices until well combined.
  3. In a greased baking dish, layer half of the tortilla strips. Top with the chicken mixture and half of the shredded cheddar.
