Ingredients
For the Sugar Cookies:
- 2 3/4 cups all-purpose flour
- 1/2 teaspoon baking powder
- 1 cup unsalted butter, softened
- 1 1/2 cups white sugar
- 1 egg
- 1 teaspoon vanilla extract
- 1/2 teaspoon almond extract
- 3 to 4 tablespoons buttermilk
For the Royal Icing:
- 3 cups powdered sugar
- 2 tablespoons meringue powder
- 5-6 tablespoons warm water
- Food coloring: red, green, and black
Instructions
- Cookies: Preheat oven to 375°F (190°C).
- In a medium bowl, stir together flour and baking powder. Set aside.
- In a large bowl, cream together butter and sugar until smooth. Beat in the egg and extracts.
- Gradually add in the flour mixture.
- If the dough is too stiff, add a little buttermilk to soften it.
- Roll out dough on a floured surface to 1/4 inch thickness. Cut into circles using a cookie cutter.
- Place cookies 1 inch apart on ungreased cookie sheets.
- Bake for 8 to 10 minutes or until cookies are lightly golden. Let them cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.
- Royal Icing: In a large bowl, whisk together powdered sugar and meringue powder.
- Add warm water one tablespoon at a time until the icing reaches a consistency like honey.
- Divide the icing into three bowls. Color one bowl red, one green, and leave one white. Transfer a small portion of white icing to another bowl and color it black for the Cocomelon seeds.
- Start by outlining the cookies with green icing to represent the watermelon rind. Fill in the center with red icing. While the red icing is still wet, dot it with black icing to make the seeds.
- Allow the icing to set for several hours.
