Ingredients

  • Chicken breasts
  • Shredded coconut
  • Panko breadcrumbs
  • Eggs
  • All-purpose flour
  • Garlic powder
  • Paprika
  • Salt
  • Black pepper
  • Coconut oil (for frying) or cooking spray (for baking)


Instructions

  • Preheat your oven to 400°F (200°C) if baking.
  • Pound the chicken breasts to an even thickness.
  • Set up a breading station with three bowls: flour mixed with garlic powder, paprika, salt, and pepper; beaten eggs; and a mixture of shredded coconut and panko breadcrumbs.
  • Dredge each chicken breast in the flour, dip in the eggs, and then coat with the coconut mixture.
  • If baking, place the chicken on a greased baking sheet and spray lightly with cooking spray. Bake for 20-25 minutes until golden and cooked through. If frying, heat coconut oil in a skillet over medium heat and cook the chicken for 4-5 minutes on each side until crispy and golden brown.
