Ingredients
1 lb boneless, skinless chicken breasts (cut into bite-sized pieces)
1 tbsp vegetable oil
1 medium onion, diced
3 garlic cloves, minced
1 tbsp fresh ginger, grated
2 tbsp red curry paste
1 tsp ground turmeric
1 tsp ground cumin
1 can (14 oz) coconut milk
1/2 cup chicken broth
1 tbsp brown sugar
Salt and pepper to taste
Fresh cilantro for garnish
Cooked rice for serving
Instructions
Heat oil in a large skillet over medium heat.
Add onion and sauté until translucent.
Stir in garlic and ginger; cook for 1 minute.
Add curry paste, turmeric, and cumin; cook for another minute.
Add chicken pieces, season with salt and pepper, and cook until lightly browned.
Pour in coconut milk and chicken broth, then add brown sugar.
Bring to a simmer, reduce heat, and cook for 15–20 minutes until chicken is cooked through and sauce thickens.
Garnish with cilantro and serve over rice.
Notes
For extra heat, add chopped chili or a dash of chili flakes.
Use chicken thighs for a juicier alternative.
