This creamy potato soup with bacon is loaded with tender potatoes, crispy bacon, and rich cream for a satisfying and cozy dish. Perfect for chilly days or a quick dinner.
Ingredients
- 6 large potatoes, peeled and diced
- 6 slices bacon, cooked and crumbled
- 1 small onion, chopped
- 3 cups chicken broth
- 2 cups milk
- 1 cup heavy cream
- 3 tbsp butter
- 2 tbsp flour
- 1 cup shredded cheddar cheese
- Salt and pepper, to taste
- Optional: chives for garnish
Instructions
- In a large pot, cook the bacon until crispy. Remove bacon and set aside, leaving about 1-2 tbsp of the bacon fat in the pot.
- Add butter and sauté onions in the bacon fat until softened.
- Stir in flour to form a roux and cook for 1-2 minutes.
- Gradually add chicken broth, stirring constantly to avoid lumps. Add diced potatoes and bring to a boil, then reduce to a simmer. Cook for 15-20 minutes until potatoes are tender.
- Stir in milk, cream, and shredded cheddar cheese until smooth and creamy.
- Add crumbled bacon back into the soup and season with salt and pepper.
- Serve hot, topped with extra bacon, cheese, and chives if desired.
Notes
- For extra creaminess, mash some of the potatoes before adding the cream.
- You can substitute the heavy cream with half-and-half for a lighter option.
