Description

This creamy potato soup with bacon is loaded with tender potatoes, crispy bacon, and rich cream for a satisfying and cozy dish. Perfect for chilly days or a quick dinner.


Ingredients

  • 6 large potatoes, peeled and diced
  • 6 slices bacon, cooked and crumbled
  • 1 small onion, chopped
  • 3 cups chicken broth
  • 2 cups milk
  • 1 cup heavy cream
  • 3 tbsp butter
  • 2 tbsp flour
  • 1 cup shredded cheddar cheese
  • Salt and pepper, to taste
  • Optional: chives for garnish


Instructions

  • In a large pot, cook the bacon until crispy. Remove bacon and set aside, leaving about 1-2 tbsp of the bacon fat in the pot.
  • Add butter and sauté onions in the bacon fat until softened.
  • Stir in flour to form a roux and cook for 1-2 minutes.
  • Gradually add chicken broth, stirring constantly to avoid lumps. Add diced potatoes and bring to a boil, then reduce to a simmer. Cook for 15-20 minutes until potatoes are tender.
  • Stir in milk, cream, and shredded cheddar cheese until smooth and creamy.
  • Add crumbled bacon back into the soup and season with salt and pepper.
  • Serve hot, topped with extra bacon, cheese, and chives if desired.

Notes

  • For extra creaminess, mash some of the potatoes before adding the cream.
  • You can substitute the heavy cream with half-and-half for a lighter option.
