Ingredients
- 8 oz rotini pasta
- 1 lb ground beef
- 1 packet (1 oz) taco seasoning mix
- 1 cup cherry tomatoes, halved
- 1 cup canned corn, drained
- 1 cup black beans, drained and rinsed
- 1/2 cup red bell pepper, chopped
- 1/2 cup red onion, finely chopped
- 1 cup shredded cheddar cheese
- 1 cup ranch dressing
- 1/2 cup sour cream
- 1/4 cup chopped fresh cilantro
- 1 tsp lime juice
- Salt and pepper to taste
- Tortilla chips, crushed (optional)
Instructions
- Cook the pasta according to package instructions. Drain and rinse with cold water to cool.
- In a large skillet, cook ground beef over medium heat until browned. Drain any excess fat and stir in taco seasoning mix. Set aside to cool.
- In a large mixing bowl, combine cooked pasta, seasoned ground beef, cherry tomatoes, corn, black beans, bell pepper, red onion, and shredded cheddar cheese.
- In a separate bowl, mix ranch dressing, sour cream, chopped cilantro, lime juice, salt, and pepper.
- Pour the dressing over the pasta mixture and toss until well combined.
- Chill in the refrigerator for at least 1 hour before serving.
- Before serving, top with crushed tortilla chips for added crunch, if desired.
Notes
- For a vegetarian version, omit the ground beef and add extra beans or veggies.
- Adjust the amount of taco seasoning and ranch dressing to taste.
