Ingredients
- 1 1/2 cups graham cracker crumbs
- 1/4 cup sugar
- 1/2 cup melted butter
- 3 packages (8 oz each) cream cheese, softened
- 1 cup sugar
- 3 large eggs
- 1 cup heavy cream
- 2 tsp vanilla extract
- 1/4 cup sugar (for caramelized topping)
Instructions
- Preheat oven to 325°F (163°C).
- Mix graham cracker crumbs, 1/4 cup sugar, and melted butter. Press into the bottom of a springform pan.
- Beat cream cheese and 1 cup sugar until smooth. Add eggs one at a time, mixing well after each addition.
- Add heavy cream and vanilla extract, mixing until smooth. Pour over crust.
- Bake for 50-60 minutes or until the center is set. Cool completely, then refrigerate for at least 4 hours.
- Before serving, sprinkle 1/4 cup sugar evenly on top. Use a kitchen torch to caramelize the sugar until golden brown.
