Description

Bruschetta Chicken Pasta combines tender chicken, al dente pasta, and a flavorful bruschetta topping made of fresh tomatoes, basil, garlic, and balsamic vinegar for a delicious and hearty meal.


Ingredients

  • 2 boneless, skinless chicken breasts
  • 8 oz pasta (spaghetti, penne, or your choice)
  • 2 cups cherry tomatoes, diced
  • 2 tbsp olive oil
  • 1 tbsp balsamic vinegar
  • 3 garlic cloves, minced
  • 1/4 cup fresh basil, chopped
  • 1/4 cup grated Parmesan cheese
  • Salt and pepper, to taste


Instructions

  1. Cook the pasta according to package instructions. Drain and set aside.
  2. Season the chicken breasts with salt and pepper. Heat 1 tbsp olive oil in a skillet and cook chicken until golden and fully cooked. Remove and slice.
  3. In the same skillet, add 1 tbsp olive oil and minced garlic. Sauté until fragrant, then stir in cherry tomatoes, balsamic vinegar, and basil. Cook for 2-3 minutes.
  4. Combine the cooked pasta with the tomato mixture, and toss to coat evenly. Add the sliced chicken on top.
  5. Serve warm, topped with Parmesan cheese and additional basil, if desired.
