Bruschetta Chicken Pasta combines tender chicken, al dente pasta, and a flavorful bruschetta topping made of fresh tomatoes, basil, garlic, and balsamic vinegar for a delicious and hearty meal.
Ingredients
- 2 boneless, skinless chicken breasts
- 8 oz pasta (spaghetti, penne, or your choice)
- 2 cups cherry tomatoes, diced
- 2 tbsp olive oil
- 1 tbsp balsamic vinegar
- 3 garlic cloves, minced
- 1/4 cup fresh basil, chopped
- 1/4 cup grated Parmesan cheese
- Salt and pepper, to taste
Instructions
- Cook the pasta according to package instructions. Drain and set aside.
- Season the chicken breasts with salt and pepper. Heat 1 tbsp olive oil in a skillet and cook chicken until golden and fully cooked. Remove and slice.
- In the same skillet, add 1 tbsp olive oil and minced garlic. Sauté until fragrant, then stir in cherry tomatoes, balsamic vinegar, and basil. Cook for 2-3 minutes.
- Combine the cooked pasta with the tomato mixture, and toss to coat evenly. Add the sliced chicken on top.
- Serve warm, topped with Parmesan cheese and additional basil, if desired.

- For extra flavor, marinate the chicken in olive oil, garlic, and balsamic vinegar before cooking.
