Ingredients
- 2 boneless, skinless chicken breasts
- 1 tbsp olive oil
- 1 tsp chili powder
- 1/2 tsp cumin
- 1/2 tsp smoked paprika
- 1/2 tsp garlic powder
- 1/2 tsp onion powder
- Salt and pepper to taste
- 4 large flour tortillas
- 1/2 cup shredded cheddar cheese
- 1/2 cup shredded lettuce
- 1/2 cup diced tomatoes
- 1/4 cup chopped cilantro
- 1/4 cup sliced red onion
- 1/2 cup cooked rice (optional)
- 1/4 cup black beans (optional)
For Chipotle Ranch Sauce:
- 1/2 cup ranch dressing
- 1 tbsp chipotle in adobo sauce (blended)
- 1 tsp lime juice
Instructions
- Preheat grill to medium-high heat.
- Rub chicken breasts with olive oil and season with chili powder, cumin, smoked paprika, garlic powder, onion powder, salt, and pepper.
- Grill chicken for 6-7 minutes per side until fully cooked (internal temp 165°F). Remove and let rest for 5 minutes before slicing.
- In a small bowl, mix ranch dressing, chipotle in adobo sauce, and lime juice to make the chipotle ranch sauce.
- Warm tortillas on the grill or stovetop.
- Assemble burritos by layering grilled chicken, cheese, lettuce, tomatoes, cilantro, red onion, rice, and black beans. Drizzle with chipotle ranch sauce.
- Fold in the sides and roll tightly.
- Grill the burritos for 1-2 minutes per side until golden brown and crispy.
