Description

This Chipotle Ranch Grilled Chicken Burrito is a flavorful, protein-packed meal featuring seasoned grilled chicken, smoky chipotle ranch sauce, and fresh toppings wrapped in a warm tortilla. A perfect blend of spice, creaminess, and crunch!


Ingredients

  • 2 boneless, skinless chicken breasts
  • 1 tbsp olive oil
  • 1 tsp chili powder
  • 1/2 tsp cumin
  • 1/2 tsp smoked paprika
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • Salt and pepper to taste
  • 4 large flour tortillas
  • 1/2 cup shredded cheddar cheese
  • 1/2 cup shredded lettuce
  • 1/2 cup diced tomatoes
  • 1/4 cup chopped cilantro
  • 1/4 cup sliced red onion
  • 1/2 cup cooked rice (optional)
  • 1/4 cup black beans (optional)

For Chipotle Ranch Sauce:

  • 1/2 cup ranch dressing
  • 1 tbsp chipotle in adobo sauce (blended)
  • 1 tsp lime juice


Instructions

  • Preheat grill to medium-high heat.
  • Rub chicken breasts with olive oil and season with chili powder, cumin, smoked paprika, garlic powder, onion powder, salt, and pepper.
  • Grill chicken for 6-7 minutes per side until fully cooked (internal temp 165°F). Remove and let rest for 5 minutes before slicing.
  • In a small bowl, mix ranch dressing, chipotle in adobo sauce, and lime juice to make the chipotle ranch sauce.
  • Warm tortillas on the grill or stovetop.
  • Assemble burritos by layering grilled chicken, cheese, lettuce, tomatoes, cilantro, red onion, rice, and black beans. Drizzle with chipotle ranch sauce.
  • Fold in the sides and roll tightly.
  • Grill the burritos for 1-2 minutes per side until golden brown and crispy.
