Ingredients

4 cups sliced fresh peaches (or thawed frozen)

1½ cups fresh raspberries

½ cup granulated sugar

1 tbsp lemon juice

1 tsp vanilla extract

1 cup all-purpose flour

1 tsp baking powder

¼ tsp salt

½ cup unsalted butter, melted

¾ cup milk

¼ cup brown sugar (optional topping)

½ tsp cinnamon (optional topping)

Instructions

Preheat oven to 350°F (175°C). Grease a baking dish (9x9 or similar).

In a bowl, mix peaches, raspberries, sugar, lemon juice, and vanilla. Set aside.

In a separate bowl, whisk together flour, baking powder, and salt.

Stir in melted butter and milk to create a batter.

Pour batter into the prepared dish. Do not stir.

Spoon the fruit mixture evenly over the batter.

Optionally sprinkle brown sugar and cinnamon on top.

Bake for 40–45 minutes or until golden and bubbly.

Let cool slightly and serve warm with ice cream or whipped cream.

Notes

You can substitute canned peaches (drained) if fresh or frozen are unavailable.

Best served warm, but also tasty at room temperature.

Store leftovers covered in the fridge for up to 3 days.
