Enjoy a flavorful and easy taco casserole made with ground beef, beans, and cheese. This hearty dish is perfect for a quick weeknight dinner and is sure to be a family favorite. With layers of spices and a cheesy topping, it's a delicious way to satisfy your taco cravings in casserole form.


Ingredients

  • 1 lb ground beef
  • 1 packet taco seasoning
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 can (15 oz) corn, drained
  • 1 can (10 oz) diced tomatoes with green chilies
  • 1 cup salsa
  • 2 cups tortilla chips, crushed
  • 2 cups shredded cheddar cheese
  • 1/2 cup sour cream
  • 1/4 cup chopped green onions
  • 1/4 cup chopped cilantro (optional)
  • 2 tbsp olive oil


Instructions

  • Preheat oven to 375°F (190°C).
  • In a large skillet, heat olive oil over medium heat. Add ground beef and cook until browned. Drain excess fat.
  • Stir in taco seasoning, black beans, corn, diced tomatoes with green chilies, and salsa. Simmer for 5 minutes.
  • In a greased baking dish, layer half of the crushed tortilla chips.
  • Spread the beef mixture over the chips.
  • Top with the remaining crushed tortilla chips and shredded cheddar cheese.
  • Bake in the preheated oven for 20-25 minutes, until the cheese is melted and bubbly.
  • Remove from the oven and let it cool for a few minutes.
  • Top with dollops of sour cream, chopped green onions, and cilantro before serving.

Notes

  • You can add sliced jalapeños for extra heat.
  • Serve with guacamole or extra salsa on the side.
