Ingredients

  • 3 cups cooked chicken (shredded)
  • 2 cups cooked rice
  • 1 can black beans (15 oz, drained and rinsed)
  • 1 can corn (15 oz, drained)
  • 1 cup salsa (mild or medium)
  • 1 cup sour cream or cream cheese
  • 1/2 cup cream of chicken soup
  • 1 tsp cumin
  • 1 tsp chili powder
  • Salt and pepper (to taste)
  • 2 cups shredded Mexican blend cheese
  • Fresh cilantro (optional, for garnish)


Instructions

  • Preheat the oven to 350°F (175°C).
  • In a large mixing bowl, combine shredded chicken, cooked rice, black beans, corn, salsa, sour cream (or cream cheese), cream of chicken soup, cumin, chili powder, salt, and pepper. Mix well.
