Description
Savor the flavors of this Heb rotisserie chicken salad recipe, inspired by H-E-B's popular version. Made with tender rotisserie chicken, crispy celery, and a creamy dressing, this chicken salad is perfect for sandwiches or on a bed of greens.
Ingredients
- 2 cups rotisserie chicken, skin removed and shredded
- 1/2 cup mayonnaise
- 1/4 cup sour cream
- 2 celery stalks, finely diced
- 2 green onions, sliced
- 1 tablespoon fresh lemon juice
- 1 teaspoon Dijon mustard
- Salt and pepper to taste
- Optional: 1/4 cup dried cranberries or grapes, halved
Instructions
- In a large mixing bowl, combine the shredded rotisserie chicken, diced celery, and sliced green onions.
- In a separate smaller bowl, whisk together the mayonnaise, sour cream, lemon juice, and Dijon mustard. Season the dressing with salt and pepper to taste.
- Pour the dressing over the chicken mixture. If using, add the dried cranberries or grapes.
- Mix until all ingredients are well combined.
- Cover the bowl and refrigerate for at least an hour before serving. This allows the flavors to meld together.
- Serve on sandwich rolls, croissants, or atop a fresh bed of greens.
Notes
- Adjust the creaminess by adding more or less mayonnaise and sour cream to your liking.
- For added crunch, consider adding chopped walnuts or pecans.
