Keywords: Cherry Almond Linzer Cookies, Linzer cookies with cherry jam, almond cookies, holiday cookie recipe.

Ingredients

  • Cookie Dough:
    • 1 cup unsalted butter, softened
    • ½ cup granulated sugar
    • 1 large egg yolk
    • 1 tsp vanilla extract
    • 1 tsp almond extract
    • 2 cups all-purpose flour
    • ½ cup almond flour
    • ¼ tsp salt
  • Filling:
    • ½ cup cherry jam (or cherry preserves)
  • Almond Glaze:
    • 1 cup powdered sugar
    • 1 tbsp milk (or more as needed)
    • ½ tsp almond extract
  • Optional: Sliced almonds for garnish

Instructions

  • Preheat the oven to 350°F (175°C). Line two baking sheets with parchment paper.
  • Make the dough: In a large bowl, cream the softened butter and sugar until light and fluffy. Add the egg yolk, vanilla extract, and almond extract, mixing until combined. Gradually add the all-purpose flour, almond flour, and salt, and mix until the dough forms.
  • Chill the dough: Divide the dough in half, wrap in plastic wrap, and refrigerate for at least 30 minutes.
  • Roll and cut the cookies: On a lightly floured surface, roll out the dough to about ¼-inch thickness. Cut out cookies using a round or fluted cookie cutter. For half of the cookies, use a smaller cutter to create a window in the center. Re-roll the dough scraps as needed.
  • Bake: Place the cookies on the prepared baking sheets and bake for 10-12 minutes, or until the edges are just lightly golden. Let them cool completely on a wire rack.
  • Assemble the cookies: Spread about 1 teaspoon of cherry jam on the bottom side of the whole cookies. Place the windowed cookies on top to create a sandwich.
  • Prepare the almond glaze: In a small bowl, whisk together powdered sugar, milk, and almond extract until smooth. Adjust the consistency with more milk if needed.
  • Decorate: Drizzle the almond glaze over the top of the cookies and garnish with sliced almonds if desired. Let the glaze set before serving.

Notes

  • The dough can be made a day ahead and stored in the fridge, making it easier to handle.
  • You can use any jam you prefer, but cherry complements the almond flavor beautifully.
