Instructions
- Preheat the oven to 350°F (175°C). Line two baking sheets with parchment paper.
- Make the dough: In a large bowl, cream the softened butter and sugar until light and fluffy. Add the egg yolk, vanilla extract, and almond extract, mixing until combined. Gradually add the all-purpose flour, almond flour, and salt, and mix until the dough forms.
- Chill the dough: Divide the dough in half, wrap in plastic wrap, and refrigerate for at least 30 minutes.
- Roll and cut the cookies: On a lightly floured surface, roll out the dough to about ¼-inch thickness. Cut out cookies using a round or fluted cookie cutter. For half of the cookies, use a smaller cutter to create a window in the center. Re-roll the dough scraps as needed.
- Bake: Place the cookies on the prepared baking sheets and bake for 10-12 minutes, or until the edges are just lightly golden. Let them cool completely on a wire rack.
