Ingredients
- 1 1/4 cups all-purpose flour
- 1 1/2 tsp baking powder
- 1 1/2 tsp baking soda
- 1/8 tsp salt
- 1 large egg, lightly beaten
- 1 1/4 cups buttermilk
- 2 tbsp unsalted butter, melted
- 2 tbsp sugar
Instructions
- In a large mixing bowl, whisk together flour, baking powder, baking soda, and salt.
- In another bowl, mix together the beaten egg, buttermilk, melted butter, and sugar.
- Pour the wet ingredients into the dry ingredients and gently fold just until combined. Avoid overmixing; it's okay if there are a few lumps.
- Preheat a nonstick skillet or griddle over medium heat. Lightly grease with butter or non-stick cooking spray.
- Pour 1/4 cup portions of the batter onto the skillet. Cook until bubbles form on the surface and the edges look set, then flip and cook until golden brown and cooked through.
- Serve immediately with maple syrup, fruit, or your preferred toppings.
Notes
- To make your pancakes extra fluffy, let the batter sit for a few minutes before cooking.
- You can also add blueberries, chocolate chips, or other mix-ins if desired
