Ingredients
- 2 cups graham cracker crumbs
- 1/2 cup unsalted butter, melted
- 3 (8 oz) packages cream cheese, softened
- 1 cup granulated sugar
- 1 cup sour cream
- 3 large eggs
- 1/2 cup fresh lime juice
- 1 tablespoon lime zest
- 2 tablespoons tequila (optional)
- 1 teaspoon vanilla extract
- 1/4 cup heavy cream
Instructions
- Preheat oven to 325°F (163°C). Grease a 9-inch springform pan.
- Combine graham cracker crumbs and melted butter. Press into the bottom of the prepared pan.
- In a large bowl, beat the cream cheese and sugar until smooth. Add sour cream and mix well.
- Add eggs, one at a time, beating after each addition. Stir in lime juice, lime zest, tequila (if using), vanilla extract, and heavy cream until combined.
- Pour the mixture over the crust. Bake for 55-60 minutes or until the center is set.
- Turn off the oven, and let the cheesecake cool in the oven with the door slightly open for 1 hour.
- Refrigerate for at least 4 hours or overnight before serving.
