Ingredients
1/2 lb shrimp, peeled and deveined
1/2 lb calamari (squid), cleaned and sliced into rings
1/2 lb bay scallops
1/2 cup celery, thinly sliced
1/4 cup red onion, thinly sliced
1/4 cup fresh parsley, chopped
2 tablespoons capers, drained
1/4 cup extra virgin olive oil
2 tablespoons lemon juice (freshly squeezed)
1 tablespoon red wine vinegar
1 garlic clove, minced
Salt and pepper, to taste
Crushed red pepper flakes (optional)
Instructions
Boil Water: Bring a large pot of salted water to a boil.
Cook Seafood: Add shrimp, scallops, and calamari separately, cooking each for 1–2 minutes until just opaque. Remove and place in ice water to stop cooking.
Drain and Dry: Drain seafood well and pat dry.
Combine: In a large bowl, mix the seafood with celery, onion, parsley, and capers.
Dress: In a small bowl, whisk olive oil, lemon juice, vinegar, garlic, salt, pepper, and red pepper flakes.
Toss and Chill: Pour dressing over salad, toss to coat, and refrigerate for at least 1 hour before serving for best flavor.
Notes
Don't overcook seafood — it should be tender, not rubbery.
You can add other seafood like mussels or clams if desired.
Best served chilled and can be made a day ahead.
