Ingredients
2 lbs lamb shoulder or leg, cut into 1-inch cubes
3 tbsp olive oil
2 tbsp fresh lemon juice
3 garlic cloves, minced
1 tbsp red wine vinegar
1 tbsp dried oregano
1 tsp salt
½ tsp black pepper

Instructions
- In a large bowl, mix olive oil, lemon juice, garlic, vinegar, oregano, salt, and pepper.
- Add lamb pieces and toss to coat. Cover and marinate for at least 2 hours or overnight.
- Preheat grill to medium-high heat.
- Thread marinated lamb onto skewers.
