Ingredients
- 1 lb boneless, skinless chicken breasts, cubed
- 4 cups potatoes, cubed
- 1 cup ranch dressing
- 1 cup shredded cheddar cheese
- 1 cup shredded mozzarella cheese
- 6 slices bacon, cooked and crumbled
- 2 tbsp olive oil
- 1 tbsp garlic powder
- 1 tbsp onion powder
- 1 tsp paprika
- Salt and pepper to taste
- 2 tbsp chopped fresh chives (optional)
Instructions
- Preheat oven to 400°F (200°C).
- In a large bowl, mix cubed potatoes with olive oil, garlic powder, onion powder, paprika, salt, and pepper.
- Spread potatoes in a single layer on a baking sheet and bake for 20 minutes.
- While potatoes are baking, cook and cube the chicken breasts.
- In a large mixing bowl, combine cooked chicken, baked potatoes, and ranch dressing. Mix well.
- Transfer the mixture to a greased 9x13 inch baking dish.
- Top with shredded cheddar and mozzarella cheeses and crumbled bacon.
- Bake for an additional 15-20 minutes, until cheese is melted and bubbly.
- Garnish with chopped fresh chives before serving, if desired.
