Description

This loaded potato ranch chicken casserole recipe combines tender chicken, crispy potatoes, and creamy ranch dressing, topped with melted cheese and bacon. It's a comforting, all-in-one meal that's ideal for busy weeknights or family gatherings.


Ingredients

  • 1 lb boneless, skinless chicken breasts, cubed
  • 4 cups potatoes, cubed
  • 1 cup ranch dressing
  • 1 cup shredded cheddar cheese
  • 1 cup shredded mozzarella cheese
  • 6 slices bacon, cooked and crumbled
  • 2 tbsp olive oil
  • 1 tbsp garlic powder
  • 1 tbsp onion powder
  • 1 tsp paprika
  • Salt and pepper to taste
  • 2 tbsp chopped fresh chives (optional)

Instructions

  1. Preheat oven to 400°F (200°C).
  2. In a large bowl, mix cubed potatoes with olive oil, garlic powder, onion powder, paprika, salt, and pepper.
  3. Spread potatoes in a single layer on a baking sheet and bake for 20 minutes.
  4. While potatoes are baking, cook and cube the chicken breasts.
  5. In a large mixing bowl, combine cooked chicken, baked potatoes, and ranch dressing. Mix well.
  6. Transfer the mixture to a greased 9x13 inch baking dish.
  7. Top with shredded cheddar and mozzarella cheeses and crumbled bacon.
  8. Bake for an additional 15-20 minutes, until cheese is melted and bubbly.
  9. Garnish with chopped fresh chives before serving, if desired.
