Ingredients
1 cucumber, diced
1 cup cherry tomatoes, halved
1 red bell pepper, diced
1/2 red onion, thinly sliced
1/2 cup kalamata olives, pitted and sliced
1/2 cup crumbled feta cheese
2 tbsp extra virgin olive oil
1 tbsp red wine vinegar
Juice of 1 lemon
1 tsp dried oregano
Salt and black pepper, to taste
Fresh parsley, chopped (optional)
Instructions
In a large bowl, combine cucumber, cherry tomatoes, red bell pepper, red onion, and olives.
In a small bowl, whisk together olive oil, vinegar, lemon juice, oregano, salt, and pepper.
Pour dressing over the salad and toss gently to coat.
Add crumbled feta and lightly mix.
Garnish with fresh parsley and serve chilled.

This salad can be made ahead and stored in the fridge for up to 2 days.
