Ingredients

For the Cookies:

  • 1/4 tsp ground cloves

  • 1/2 cup unsalted butter, softened

  • 1/2 cup brown sugar, packed
  • 1 cup pumpkin puree
  • 1 large egg
  • 1 tsp vanilla extract

For the Glaze:

  • 2 cups powdered sugar
  • 3 tbsp milk
  • 1 tbsp unsalted butter, melted
  • 1/2 tsp vanilla extract


Instructions

  • Preheat the oven to 350°F (175°C) and line baking sheets with parchment paper.
  • In a medium bowl, whisk together flour, baking powder, baking soda, salt, cinnamon, nutmeg, cloves, and ginger.
  • In a large bowl, cream together softened butter, granulated sugar, and brown sugar until light and fluffy.
  • Beat in the pumpkin puree, egg, and vanilla extract until well combined.
  • Gradually add the dry ingredients to the wet ingredients and mix until just combined.
  • Drop spoonfuls of dough onto the prepared baking sheets, spacing them about 2 inches apart.
  • Bake for 10-12 minutes, or until the edges are lightly golden. Remove from the oven and let cool on a wire rack.
  • To make the glaze, whisk together powdered sugar, milk, melted butter, and vanilla extract until smooth.
  • Once the cookies have cooled, drizzle the glaze over the tops. Allow the glaze to set before serving.
