Ingredients
For the Pork:
- 1 lb ground pork
- 3 cloves garlic, minced
- 2 tablespoons fish sauce
- 1 tablespoon sugar
- 1 teaspoon black pepper
For the Pickled Vegetables:
- 1 carrot, julienned
- 1 daikon radish, julienned
- 1/4 cup white vinegar
- 1/4 cup sugar
- 1/2 teaspoon salt
For the Spring Rolls:
- Rice paper wrappers
- Fresh lettuce leaves
- Fresh mint leaves
- Fresh cilantro
- Fresh Thai basil (optional)
- Vermicelli rice noodles, cooked according to package instructions
Instructions
- Marinate the Pork: In a bowl, combine ground pork, garlic, fish sauce, sugar, and black pepper. Mix until well combined. Marinate for at least 1 hour.
- Prepare Pickled Vegetables: In another bowl, dissolve sugar and salt in vinegar. Add the julienned carrot and daikon radish. Mix well and let it sit for at least 30 minutes.
- Grill the Pork: Form the marinated pork into small patties or skewer them. Grill until fully cooked and slightly charred.
- Assemble the Spring Rolls: Dip a rice paper wrapper in warm water to soften. Lay on a flat surface. Place a lettuce leaf in the center, followed by some herbs, vermicelli noodles, a piece of grilled pork, and some pickled vegetables. Roll up, tucking in the sides, to form a tight spring roll.
- Serve: Serve the Nem Nuong Cuon with your favorite Vietnamese dipping sauce, like nuoc cham.
