Ingredients
- 2 tablespoons olive oil
- 1 cup onion, diced
- 1/2 cup celery, diced
- 2 garlic cloves, minced
- 4 cups chicken broth
- 2 cups cooked chicken, shredded
- 1 cup heavy cream
- 1/2 teaspoon thyme
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 cup fresh spinach, chopped
- 1 package (16 oz) gnocchi
- 1/2 cup grated Parmesan cheese
Instructions
- Heat olive oil in a large pot over medium heat. Sauté onion, celery, and garlic until softened.
- Add chicken broth, cooked chicken, thyme, salt, and pepper. Bring to a boil.
- Stir in gnocchi and cook until they float, about 3-4 minutes.
- Lower heat to a simmer and stir in heavy cream. Add spinach and Parmesan, stirring until spinach wilts.
- Serve hot and enjoy!
Notes
- You can use rotisserie chicken for convenience.
- For a thicker soup, mix 1 tablespoon of cornstarch with water and stir into the soup.
- Add more Parmesan for extra cheesy flavor!
