Ingredients

  • 2 tablespoons olive oil
  • 1 cup onion, diced
  • 1/2 cup celery, diced
  • 2 garlic cloves, minced
  • 4 cups chicken broth
  • 2 cups cooked chicken, shredded
  • 1 cup heavy cream
  • 1/2 teaspoon thyme
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 cup fresh spinach, chopped
  • 1 package (16 oz) gnocchi
  • 1/2 cup grated Parmesan cheese


Instructions

  1. Heat olive oil in a large pot over medium heat. Sauté onion, celery, and garlic until softened.
  2. Add chicken broth, cooked chicken, thyme, salt, and pepper. Bring to a boil.
  3. Stir in gnocchi and cook until they float, about 3-4 minutes.
  4. Lower heat to a simmer and stir in heavy cream. Add spinach and Parmesan, stirring until spinach wilts.

Notes

  • You can use rotisserie chicken for convenience.
  • For a thicker soup, mix 1 tablespoon of cornstarch with water and stir into the soup.
