Ingredients
- 4 boneless, skinless chicken breasts
- 1 cup long-grain rice (uncooked)
- 2 cups chicken broth
- 1 cup heavy cream
- 1 cup grated Parmesan cheese
- 1 small onion, finely diced
- 3 garlic cloves, minced
- 2 tbsp olive oil
- 1 tsp dried Italian seasoning
- Salt and pepper, to taste
- Fresh parsley, for garnish
Instructions
- Heat olive oil in a large skillet over medium-high heat. Season chicken breasts with salt, pepper, and Italian seasoning, then sear on both sides until golden. Remove from skillet and set aside.
- In the same skillet, sauté diced onion and garlic until fragrant.
- Add rice and toast for 1 minute. Stir in chicken broth and heavy cream. Bring to a gentle simmer.
- Place chicken breasts back into the skillet on top of the rice mixture. Cover and cook on low for 25-30 minutes, until the rice is tender and the chicken is fully cooked.
- Stir in Parmesan cheese until melted and creamy. Adjust seasoning as needed.
- Garnish with parsley and serve hot.
