Ingredients
- 4 chicken thighs or drumsticks
- 1 cup long-grain white rice
- 2 cups chicken broth
- 1 small onion, diced
- 3 cloves garlic, minced
- 1 tsp paprika
- 1 tsp dried thyme
- 1 tsp salt
- 1/2 tsp black pepper
- 1 tbsp olive oil
- Optional: chopped parsley for garnish
Instructions
- Preheat oven to 350°F (175°C).
- In a baking dish, spread the rice evenly across the bottom.
- Heat olive oil in a skillet and sear the chicken until golden brown on both sides. Remove and set aside.
- In the same skillet, sauté onion and garlic until fragrant.
- Pour chicken broth into the skillet and stir in paprika, thyme, salt, and pepper. Let simmer for 2-3 minutes.
- Pour the broth mixture over the rice in the baking dish. Place the seared chicken on top.
- Cover the dish with foil and bake for 30 minutes.
- Remove the foil and bake for an additional 20 minutes or until the rice is tender and chicken is cooked through.
- Garnish with parsley before serving.
