Ingredients

  • 4 chicken thighs or drumsticks
  • 1 cup long-grain white rice
  • 2 cups chicken broth
  • 1 small onion, diced
  • 3 cloves garlic, minced
  • 1 tsp paprika
  • 1 tsp dried thyme
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 tbsp olive oil
  • Optional: chopped parsley for garnish


Instructions

  1. Preheat oven to 350°F (175°C).
  2. In a baking dish, spread the rice evenly across the bottom.
