Description

This Pineapple Cucumber Salad is a crisp, juicy, and refreshing side dish combining tropical pineapple with cool cucumber. It's light, easy to prepare, and packed with nutrients—perfect for barbecues, potlucks, or healthy everyday meals.


Ingredients

2 cups fresh pineapple, diced

1 large cucumber, thinly sliced or diced

¼ cup red onion, thinly sliced

2 tbsp fresh lime juice

1 tbsp honey or agave (optional)

1 tbsp fresh mint, chopped

Salt and pepper to taste

Optional: chili flakes or tajín for spice


Instructions
