  • Pumpkin puree
  • Sugar

  • Vanilla extract
  • Cream cheese

  • Powdered sugar


Instructions

 

  1. Preheat the oven to 375°F (190°C) and line a jelly roll pan with parchment paper.
  2. In a bowl, whisk together flour, baking powder, baking soda, pumpkin pie spice, and salt.
  3. In a separate bowl, beat eggs and sugar until thick and pale. Mix in the pumpkin puree and vanilla extract.
  4. Fold in the dry ingredients until just combined. Spread the batter evenly in the prepared pan.
  5. Bake for 13-15 minutes, until the cake springs back when touched.
  6. Immediately turn the cake out onto a clean kitchen towel dusted with powdered sugar. Carefully roll the cake up in the towel and let it cool completely.
  7. For the filling, beat together cream cheese, butter, vanilla, and powdered sugar until smooth.
  8. Unroll the cooled cake, spread the cream cheese filling evenly, then roll it back up without the towel.
  9. Wrap the pumpkin roll in plastic wrap and chill for at least 1 hour before slicing and serving.
