Ingredients
For the Filling:

Instructions
- Prepare the Filling:
- Preheat your oven to 375°F (190°C).
- In a large skillet over medium heat, cook the ground beef or lamb until browned, breaking it up with a spoon as it cooks. Drain excess fat if necessary.
- Add the diced onion and garlic to the skillet and cook until the onion is soft and translucent, about 5 minutes.
- Stir in the tomato paste, Worcestershire sauce, thyme, rosemary, salt, and pepper. Cook for 2 minutes until well combined.
- Add the mixed vegetables and broth, stirring to combine. Simmer for 5 minutes until the mixture thickens slightly. Remove from heat.
- Prepare the Pumpkin Topping:
- In a medium bowl, combine the pumpkin puree, butter, milk or cream, cinnamon, nutmeg, salt, and pepper. Stir until smooth and creamy.
- Adjust seasoning to taste.
- Assemble the Shepherd’s Pie:
- Transfer the meat filling to a baking dish, spreading it out evenly.
- Spoon the pumpkin mixture over the top of the meat filling, spreading it out to cover the filling completely.
- Bake:
- Bake in the preheated oven for 25-30 minutes, or until the top is golden and the filling is bubbling around the edges.
- Let cool slightly before serving.
