Ingredients
1 lb ground turkey
1 cup uncooked orzo
1 tbsp olive oil
1 small onion, diced
2 garlic cloves, minced
1 bell pepper, diced
1 can (14.5 oz) diced tomatoes
2 cups chicken broth
1 tsp Italian seasoning
Salt and pepper to taste
Fresh parsley or parmesan for garnish (optional)
Instructions
Heat olive oil in a large skillet over medium heat.
Add onion and cook until translucent, then add garlic and bell pepper; sauté for 2–3 minutes.
Add ground turkey and cook until browned, breaking it up with a spoon.
Stir in orzo, diced tomatoes, chicken broth, and Italian seasoning.
Bring to a boil, then reduce heat and simmer for 12–15 minutes, stirring occasionally, until orzo is tender.
Season with salt and pepper.
Garnish with parsley or parmesan if desired. Serve hot.
Notes
You can add spinach or zucchini for extra veggies. Swap chicken broth for vegetable broth for a different flavor profile.
