Ingredients

  • 1 lb smoked sausage, sliced
  • 2 large sweet potatoes, peeled and cubed
  • 2 tbsp olive oil
  • Salt and pepper to taste
  • 3 tbsp honey
  • 2 garlic cloves, minced
  • 1 tbsp soy sauce
  • 1 tsp Dijon mustard
  • 1 tsp apple cider vinegar
  • Fresh parsley for garnish (optional)


Instructions

  1. Preheat oven to 400°F (200°C).
  2. Toss sweet potatoes with 1 tbsp olive oil, salt, and pepper. Spread on a baking sheet and roast for 15 minutes.
  3. While potatoes roast, heat 1 tbsp olive oil in a pan. Sauté sausage slices until browned, then set aside.
  4. In a bowl, whisk together honey, garlic, soy sauce, mustard, and vinegar.
  5. After 15 minutes, add sausage to sweet potatoes and drizzle sauce over. Mix well.
