Ingredients
- 1 lb smoked sausage, sliced
- 2 large sweet potatoes, peeled and cubed
- 2 tbsp olive oil

- 2 garlic cloves, minced

- 1 tsp Dijon mustard
- 1 tsp apple cider vinegar

Instructions
- Preheat oven to 400°F (200°C).
- Toss sweet potatoes with 1 tbsp olive oil, salt, and pepper. Spread on a baking sheet and roast for 15 minutes.
- While potatoes roast, heat 1 tbsp olive oil in a pan. Sauté sausage slices until browned, then set aside.

- After 15 minutes, add sausage to sweet potatoes and drizzle sauce over. Mix well.
