Ingredients

  • For Meatloaf Muffins:
  • 1 lb ground beef
  • 1/2 cup breadcrumbs
  • 1/4 cup milk
  • 1 egg
  • 1/4 cup finely chopped onion
  • 2 tbsp ketchup
  • 1 tbsp Worcestershire sauce
  • 1 tsp garlic powder
  • Salt & pepper to taste
  • For Mashed Potato Frosting:
  • 2 cups peeled & diced potatoes
  • 1/4 cup milk
  • 2 tbsp butter
  • Salt to taste


Instructions

  1. Preheat oven to 375°F (190°C).
  2. In a large bowl, combine all meatloaf ingredients and mix until well combined.
  3. Grease a muffin tin and divide the meat mixture evenly into the cups.
  4. Bake for 20–25 minutes or until cooked through.
  5. Meanwhile, boil potatoes until fork-tender, then drain.
  6. Mash potatoes with milk, butter, and salt until smooth.
  7. Let meatloaf muffins cool slightly, then pipe or spoon mashed potatoes on top like frosting.
  8. Optionally, broil for 2–3 minutes to lightly brown the mashed topping.

Notes

Add shredded cheese to the mashed potatoes for extra flavor.

Ground turkey or chicken can be used as a leaner option.
