This easy Slow Cooker Chicken Marsala recipe delivers tender chicken in a rich, flavorful mushroom and Marsala wine sauce. Perfect for a hands-off, delicious dinner that your family will love!


Ingredients

  • 2 lbs boneless, skinless chicken breasts
  • 1 cup Marsala wine
  • 1 cup chicken broth
  • 1/2 cup heavy cream
  • 8 oz mushrooms, sliced
  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • 1 tsp dried thyme
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 2 tbsp olive oil
  • 2 tbsp cornstarch (optional)
  • 2 tbsp water (optional)
  • Fresh parsley, chopped (for garnish)


Instructions

  • Heat olive oil in a skillet over medium-high heat. Sear chicken breasts for 2-3 minutes on each side until golden brown.
  • Place seared chicken breasts in the slow cooker.
  • In the same skillet, add mushrooms, onion, and garlic. Cook for 3-4 minutes until the vegetables are softened.
  • Add Marsala wine to the skillet, scraping up any browned bits from the bottom. Cook for 2 minutes.
  • Pour the mushroom mixture over the chicken in the slow cooker.
  • Add chicken broth, dried thyme, salt, and pepper to the slow cooker.
  • Cover and cook on low for 4-5 hours, or until the chicken is tender.
  • In the last 30 minutes of cooking, add heavy cream and stir to combine.
  • If a thicker sauce is desired, mix cornstarch and water in a small bowl and stir into the slow cooker.
  • Garnish with fresh parsley before serving.
