Ingredients
2 cups fresh strawberries, hulled
1/3 cup fresh lemon juice (about 2 lemons)
1/4 to 1/3 cup honey or maple syrup (adjust to taste)
1/2 cup water
Instructions
Add strawberries, lemon juice, sweetener (honey or maple syrup), and water to a blender.
Blend until smooth. Taste and adjust sweetness if needed.
Pour the mixture evenly into popsicle molds.
Insert sticks and freeze for at least 4–6 hours or until completely solid.
To release, run warm water over the outside of the mold for a few seconds. Enjoy!
Notes
You can strain the mixture through a fine mesh sieve before pouring into molds if you prefer a smoother texture.
Add sliced strawberries or lemon slices into the molds for extra texture and appearance.
Replace water with coconut water for an electrolyte boost.
