Ingredients

  • 1 lb ground beef
  • 1 cup uncooked white rice
  • 3 bell peppers (chopped)
  • 1 can (15 oz) tomato sauce
  • 1 can (14.5 oz) diced tomatoes
  • 1 small onion (chopped)
  • 2 cloves garlic (minced)
  • 1 1/2 cups beef broth
  • 1 tsp Italian seasoning
  • Salt and pepper to taste
  • 1 cup shredded cheddar cheese


Instructions

  • Preheat oven to 375°F (190°C).
  • In a large skillet, cook ground beef over medium heat until browned. Drain excess fat.
  • Add onion and garlic to the skillet and cook until softened.
  • Stir in bell peppers, diced tomatoes, tomato sauce, rice, beef broth, Italian seasoning, salt, and pepper.
  • Bring the mixture to a boil, then reduce heat and simmer for 5 minutes.
  • Transfer the mixture to a greased 9x13 inch baking dish. Cover with foil and bake for 30-35 minutes, or until the rice is tender.
  • Remove foil, sprinkle cheese on top, and bake uncovered for an additional 5 minutes, or until the cheese is melted.
  • Let cool for a few minutes before serving.
